How do you make pork cacciatore?
Cut the pork tenderloin into one inch pieces. In a large skillet over medium high heat add 1 tablespoon olive oil. Brown the pork pieces until cooked through, to an internal temperature of 145 degrees Fahrenheit. Set aside on a plate. Add 1 tbsp olive oil, garlic, mushrooms, carrots, bell pepper, and sauté© until tender. Add chicken broth, diced tomatoes, tomato paste, and Italian seasoning and combine. Add pork pieces back into the skillet and simmer until sauce is thickened and heated through.

I like to add simple pasta, potatoes or rice to the pork cacciatore to make it a complete meal.
